Fragrant Salmon Parcels

Level of difficulty: easy

Cooking Time: 10 mins


Ingredients:

Aluminum foil
Olive oil for brushing
4 x 8oz (225g) salmon fillets
8 bay leaves
8 cloves
8 sprigs of fresh rosemary
8 juniper berries - squeezed between your fingers to release the juice
Grated zest and juice of 2 oranges
Salt and black pepper


Method

Preheat the oven to 190c Mk5  375F or 170C fan oven

Cut four large squares of foil, enough to enclose the fish, then brush with a little oil.

On each of the four pieces place two sprigs of the rosemary and a little orange zest. Put the salmon fillets on top of that.

Now push a clove through each of the bay leaves and then press two of these into each salmon fillet. Top with the juniper berries, the rest of the orange zest and the juice.

Season well with the salt and the pepper and then fold the foil over to enclose the fish loosely, sealing the edges firmly so none of the juices can escape.

Place on a baking tray in the oven for about 10 minutes or until cooked.

Open and serve with mayonnaise which has been flavoured with the grated zest and juice of 1 lemon.
